Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the potatoes into evenly sized cubes, about 1 to 1.5 inches.
  3. Mince the fresh garlic cloves.
  4. In a large mixing bowl, combine the chopped potatoes with olive oil, minced garlic, salt, pepper, and any herbs you’re using.
  5. Spread the potatoes on a baking sheet without overcrowding.
  6. Roast the potatoes for 30-35 minutes, stirring halfway through.
  7. Lower the oven temperature to 375°F (190°C), sprinkle cheese over the potatoes and return to the oven for 10-15 minutes until the cheese is bubbly.
