- 4 cloves fresh garlic, minced
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 2 tbsp olive oil
- 2 tsp fresh rosemary or thyme, chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and chop the potatoes into evenly sized cubes, about 1 to 1.5 inches.
- Mince the fresh garlic cloves.
- In a large mixing bowl, combine the chopped potatoes with olive oil, minced garlic, salt, pepper, and any herbs you’re using.
- Spread the potatoes on a baking sheet without overcrowding.
- Roast the potatoes for 30-35 minutes, stirring halfway through.
- Lower the oven temperature to 375°F (190°C), sprinkle cheese over the potatoes and return to the oven for 10-15 minutes until the cheese is bubbly.
- Garnish with fresh herbs just before serving.

For added flavor, consider using a mix of cheeses or adding other vegetables. Ensure potatoes are cut to similar sizes for even cooking.
