A hearty and comforting casserole that combines ground beef, rice, and cheese for a delicious family meal.
Ingredients

- 1 pound ground beef
- 1 cup long-grain white rice
- 2 cups cheddar cheese, shredded
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can cream of mushroom soup
- 1 cup beef or chicken broth
- Salt, to taste
- Pepper, to taste
- Fresh thyme or parsley, for seasoning (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium-high heat, brown the ground beef. Add onions and garlic, cooking until soft and fragrant.
- Drain excess fat and combine the beef mixture with rice, cream of mushroom soup, and broth in a bowl.
- Stir in half of the cheese, then transfer the mixture to a greased 9×13 inch baking dish.
- Top with the remaining cheese.
- Cover with foil and bake for 25 to 30 minutes. Remove foil and bake for an additional 10 to 15 minutes until cheese is bubbly and golden.
- Allow to cool for a few minutes before serving.
Notes
For added flavor, feel free to add diced jalapeños or different herbs.
