Ingredients

- 4 medium russet or Yukon Gold potatoes
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 3 cloves garlic, minced
- 2 tablespoons butter or oil
- Fresh cilantro or chives, for garnish
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Scrub potatoes, prick with a fork, and roast for about 45 minutes or until fork-tender. Allow to cool and peel.
- In a skillet, melt butter or oil over medium heat. Add garlic and cook until fragrant, about 1 minute. Mash roasted potatoes and fold in the cheeses.
- Lay tortillas flat and spoon a generous amount of filling down the center. Fold in the sides and roll from the bottom. Place seam-side down on a baking sheet.
- Brush tops with melted butter or oil and bake for 10 minutes or until golden brown.
- Serve with salsa, sour cream, or guacamole for dipping. Enjoy!
Notes
For a spicy kick, substitute cheese with pepper jack. Add sautéed vegetables for extra flavor.
