Ingredients

  • 4 medium russet or Yukon Gold potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 3 cloves garlic, minced
  • 2 tablespoons butter or oil
  • Fresh cilantro or chives, for garnish
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub potatoes, prick with a fork, and roast for about 45 minutes or until fork-tender. Allow to cool and peel.
  2. In a skillet, melt butter or oil over medium heat. Add garlic and cook until fragrant, about 1 minute. Mash roasted potatoes and fold in the cheeses.
  3. Lay tortillas flat and spoon a generous amount of filling down the center. Fold in the sides and roll from the bottom. Place seam-side down on a baking sheet.
  4. Brush tops with melted butter or oil and bake for 10 minutes or until golden brown.
  5. Serve with salsa, sour cream, or guacamole for dipping. Enjoy!

Notes

For a spicy kick, substitute cheese with pepper jack. Add sautéed vegetables for extra flavor.
