Ingredients

  • 4 medium Yukon Gold potatoes
  • 1 cup sharp cheddar cheese, shredded
  • 4 large flour tortillas
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Peel and dice potatoes into small cubes, then boil in salted water until tender (about 15-20 minutes).
  2. Drain potatoes and return to pot. Add cheese, butter, and spices and mash until creamy, adjusting seasoning to taste.
  3. Warm each tortilla in a skillet for a few seconds on each side until pliable.
  4. Place a generous scoop of the potato mixture down the center of each tortilla.
  5. Fold in the sides and roll tightly to secure the filling.
  6. In the same skillet, heat oil and cook burritos seam-side down until golden and crisp.
  7. Serve cut in half with toppings of your choice.

Notes

For extra crunch, bake or grill the burritos after pan-frying.
