- 4 medium Yukon Gold potatoes
- 1 cup sharp cheddar cheese, shredded
- 4 large flour tortillas
- 1 tablespoon butter
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Oil for frying
Instructions
- Peel and dice potatoes into small cubes, then boil in salted water until tender (about 15-20 minutes).
- Drain potatoes and return to pot. Add cheese, butter, and spices and mash until creamy, adjusting seasoning to taste.
- Warm each tortilla in a skillet for a few seconds on each side until pliable.
- Place a generous scoop of the potato mixture down the center of each tortilla.
- Fold in the sides and roll tightly to secure the filling.
- In the same skillet, heat oil and cook burritos seam-side down until golden and crisp.
- Serve cut in half with toppings of your choice.
Notes
For extra crunch, bake or grill the burritos after pan-frying.
