- 1 lb sausage (Italian or your preference)
- 4 medium Yukon Gold or red potatoes, diced
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- 1 teaspoon dried thyme or rosemary (optional)
Instructions
- Prepare your ingredients by washing and dicing the potatoes, chopping the onion and bell peppers, and mincing the garlic.
- Heat a large skillet over medium heat, adding olive oil or butter. Add the sausage and cook until golden and crumbled, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the onion, bell peppers, and garlic. Sauté for 3-5 minutes until softened.
- Fold in the diced potatoes and season with salt, pepper, and herbs. Cover and cook for 10-15 minutes, stirring occasionally, until potatoes are tender.
- Return the cooked sausage to the skillet, mixing everything evenly.
- Sprinkle cheese generously over the mixture, lower heat, cover, and allow cheese to melt for about 5 minutes.
- Once melted, remove from heat, garnish with fresh herbs if desired, and serve hot.
Notes
For a healthier version, consider using turkey sausage and adding seasonal vegetables. Store leftovers in an airtight container for up to three days.
