Deliciously unique muffins combining classic mac and cheese with the bold flavor of Cheetos Flamin’ Hot.
Ingredients

- 2 cups elbow macaroni
- 1 cup Cheetos Flamin’ Hot, crushed
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 4 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 2 large eggs
- 1 teaspoon garlic powder
- Salt, to taste
- Pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Add elbow macaroni and cook until al dente, about 7-8 minutes. Drain and set aside.
- In a large saucepan over medium heat, melt the butter. Stir in flour and cook for about one minute.
- Gradually whisk in the milk, stirring constantly until thickened, about 5 minutes.
- Lower the heat and mix in cheddar and mozzarella cheeses until melted. Stir in cooked macaroni and half of the crushed Cheetos.
- Allow the mixture to cool, then stir in eggs, garlic powder, salt, and pepper.
- Preheat oven to 350°F (175°C) and grease a muffin tin. Fill each cup three-quarters full with the mac and cheese mixture and top with remaining crushed Cheetos.
- Bake for 20-25 minutes until tops are golden and crisp. Let them cool slightly before serving.
Notes
Allow the mixture to cool slightly before adding eggs to prevent scrambling. Bake until edges are crispy for perfect texture.
