- 3/4 cup granulated sugar
- 2 cups all-purpose flour
- 1 teaspoon almond extract
- 1/2 cup chopped cherries (fresh or frozen)
- 1 egg yolk
Instructions
- Preheat the oven to 350°F (175°C).
- Cream the butter and sugar in a large mixing bowl until light and fluffy (about 2-3 minutes).
- Add almond extract and egg yolk, mixing until combined.
- Gradually incorporate the flour, mixing just until combined.
- Fold in the chopped cherries gently.
- Scoop tablespoon-sized balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, until the edges are slightly golden.
- Allow to cool on a wire rack before serving.
Notes
For a dairy-free version, substitute butter with coconut oil. You can also adjust the recipe by adding chocolate chips or a sprinkle of sea salt.
