  • 1 teaspoon almond extract
  • 1/2 cup chopped cherries (fresh or frozen)
  • 1 egg yolk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the butter and sugar in a large mixing bowl until light and fluffy (about 2-3 minutes).
  3. Add almond extract and egg yolk, mixing until combined.
  4. Gradually incorporate the flour, mixing just until combined.
  5. Fold in the chopped cherries gently.
  6. Scoop tablespoon-sized balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, until the edges are slightly golden.
  8. Allow to cool on a wire rack before serving.

Notes

For a dairy-free version, substitute butter with coconut oil. You can also adjust the recipe by adding chocolate chips or a sprinkle of sea salt.
