- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- ⅓ cup cocoa powder
- 16 oz cream cheese
- 2 cups powdered sugar
- 1–2 cups cherries (fresh or canned)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan with parchment paper.
- Melt the butter in a large mixing bowl and let it cool slightly.
- Add granulated sugar and brown sugar; stir until combined.
- Mix in the eggs, one at a time, ensuring incorporation before adding the next.
- Stir in vanilla extract.
- Sift in all-purpose flour and cocoa powder, gently mixing until just combined.
- Spread half of the brownie batter into the prepared baking pan and bake for 15 minutes.
- In a separate bowl, beat cream cheese until smooth; add powdered sugar, eggs, and vanilla, mixing until fluffy.
- Remove the brownie base from the oven and spread the cheesecake layer over it.
- Dollop the remaining brownie batter over the cheesecake; swirl with a knife for a marbled effect.
- Scatter cherries on top.
- Bake for an additional 25-30 minutes, until edges are set and the center has a slight jiggle.
- Cool completely before slicing into squares and serving.
Notes
For a lighter option, substitute butter with coconut oil, and for gluten-free, use almond or coconut flour. Store leftovers in an airtight container for up to 5 days.
