  • 1 cup sour cream
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup pitted and chopped cherries
  • 1/2 cup finely chopped pistachios
  • 1 and 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar (for the crust)
  • Coarsely chopped pistachios (for garnish)
  • Fresh cherries (for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and sugar until it resembles wet sand. Press firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then cool.
  3. In a large mixing bowl, beat softened cream cheese until fluffy, then blend in sugar until smooth.
  4. Add sour cream and vanilla extract, mix well. Beat in eggs one at a time until smooth.
  5. Gently fold in chopped cherries and finely chopped pistachios.
  6. Pour the cheesecake filling over the cooled crust and spread evenly. Bake for 45-50 minutes until edges are set and center is slightly jiggly.
  7. Turn off the oven and leave cheesecake inside for an additional hour to cool gradually.
  8. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
  9. Before serving, top with chopped pistachios and additional cherries.
