- 24 ounces cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup pitted and chopped cherries
- 1/2 cup finely chopped pistachios
- 1 and 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar (for the crust)
- Coarsely chopped pistachios (for garnish)
- Fresh cherries (for garnish)
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs with melted butter and sugar until it resembles wet sand. Press firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then cool.
- In a large mixing bowl, beat softened cream cheese until fluffy, then blend in sugar until smooth.
- Add sour cream and vanilla extract, mix well. Beat in eggs one at a time until smooth.
- Gently fold in chopped cherries and finely chopped pistachios.
- Pour the cheesecake filling over the cooled crust and spread evenly. Bake for 45-50 minutes until edges are set and center is slightly jiggly.
- Turn off the oven and leave cheesecake inside for an additional hour to cool gradually.
- Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
- Before serving, top with chopped pistachios and additional cherries.
