Description
A delightful cheesecake featuring sweet cherries and crunchy pistachios, perfect for any gathering.
Ingredients
Scale
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 2 cups fresh cherries, pitted and chopped
- 1/2 cup crushed pistachios
- 1 tsp vanilla extract
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
Instructions
- Prepare the crust: In a mixing bowl, combine graham cracker crumbs and melted butter until well blended. Press this mixture into the bottom of a springform pan and refrigerate.
- Make the filling: Blend softened cream cheese and sugar until fluffy. Add eggs one at a time, mixing each addition. Incorporate vanilla extract, then gently fold in cherries and pistachios.
- Combine and bake: Pour the mixture over the chilled crust. Bake at 325°F for 55–60 minutes until the edges are set and center slightly jiggles.
- Cool and chill: Let cheesecake cool in the oven with the door slightly ajar for 1 hour, then refrigerate for at least 4 hours or overnight.
- Add topping: Simmer additional cherries with sugar for a sauce. Drizzle over cheesecake and sprinkle with fresh pistachios before serving.
Notes
Patience is key; allow the cheesecake to cool gradually to prevent cracks. Using room temperature ingredients helps transition smoothly.
