- 2–3 ripe bananas
- 1 cup old-fashioned oats
- 1 cup all-purpose flour (or substitute with whole wheat flour)
- 1/2 cup brown sugar (or coconut sugar)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup butter (or coconut oil)
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Optional: nuts, dark chocolate chips, or dried fruits
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the bananas in a large mixing bowl until smooth, about 2-3 minutes.
- Mix in the melted butter, brown sugar, vanilla extract, and cinnamon until well combined.
- In a separate bowl, whisk together oats, flour, baking soda, and a pinch of salt. Gradually mix this into the wet ingredients.
- Gently fold in any optional ingredients like nuts or chocolate chips.
- Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For an extra touch, sprinkle a pinch of sea salt on warm cookies. Make sure bananas are very ripe for the best flavor.
