- 2 cups boneless, skinless chicken, diced
- 2 leeks, cleaned and sliced
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups chicken broth
- 1/4 cup heavy cream
- 1 teaspoon fresh thyme or parsley
- 1 sheet puff pastry
- Salt and pepper to taste
Instructions
- Dice the chicken into bite-sized pieces.
- Heat butter in a skillet over medium heat and sauté the leeks until soft.
- Add the chicken and cook until no longer pink.
- Sprinkle flour over the mixture and stir to combine.
- Gradually add broth while stirring, allowing the mixture to thicken.
- Mix in heavy cream, herbs, salt, and pepper, then let the filling cool.
- Roll out the pastry and cover the filling in a pie dish, cutting slits for steam to escape.
- Brush pastry with egg wash and bake at 400°F for 30-35 minutes until golden brown.
Notes
Let the pie rest for about 10 minutes after baking to set the filling for easier slicing.
