Ingredients

  • 2 cups boneless, skinless chicken, diced
  • 2 leeks, cleaned and sliced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 1/4 cup heavy cream
  • 1 teaspoon fresh thyme or parsley
  • 1 sheet puff pastry
  • Salt and pepper to taste

Instructions

  1. Dice the chicken into bite-sized pieces.
  2. Heat butter in a skillet over medium heat and sauté the leeks until soft.
  3. Add the chicken and cook until no longer pink.
  4. Sprinkle flour over the mixture and stir to combine.
  5. Gradually add broth while stirring, allowing the mixture to thicken.
  6. Mix in heavy cream, herbs, salt, and pepper, then let the filling cool.
  7. Roll out the pastry and cover the filling in a pie dish, cutting slits for steam to escape.
  8. Brush pastry with egg wash and bake at 400°F for 30-35 minutes until golden brown.

Notes

Let the pie rest for about 10 minutes after baking to set the filling for easier slicing.
