Description

Delightful and savory Chicken Cups filled with tender chicken, aromatic herbs, and creamy goodness, all wrapped in flaky puff pastry.


Ingredients

  • 1 lb ground chicken (or shredded cooked chicken)
  • 1 package puff pastry (store-bought)
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 8 oz mushrooms (cremini or button), chopped
  • 2 tbsp fresh parsley or thyme, chopped
  • 4 oz cream cheese or sour cream
  • Salt and pepper to taste
  • Optional: cheese (mozzarella or cheddar), paprika
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat the olive oil over medium heat. Sauté the chopped onions until translucent.
  3. Add minced garlic and cook for about a minute until fragrant.
  4. Add the mushrooms and ground chicken, cooking until the chicken is no longer pink and mushrooms are tender.
  5. Stir in the fresh herbs and cream cheese, mixing well until combined. Season with salt and pepper.
  6. Roll out the puff pastry on a floured surface and cut it into squares to fit muffin cups.
  7. Press the pastry into the muffin tin, leaving some overhang.
  8. Fill each pastry cup with the chicken mixture and fold the edges over the top.
  9. Bake for 20–25 minutes until the pastry is golden brown.
  10. Allow to cool for a few minutes before serving.

Notes

For a vegetarian option, replace ground chicken with sautéed spinach or zucchini. Use crescent roll dough if out of puff pastry.
