- 2 cups boneless chicken (breast or thighs), diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, diced
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 tablespoons soy sauce
- 4 oz cream cheese
- Ready-made pastry or wonton wrappers
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, sauté diced chicken until golden and cooked through, around 5-7 minutes. Season with salt and pepper to taste.
- Remove the cooked chicken and in the same skillet, soften chopped onions and garlic until fragrant and translucent.
- Toss in your choice of diced veggies and cook until they soften.
- Return the chicken to the skillet, add soy sauce, and mix in cream cheese until combined. Adjust seasoning as necessary, then remove from heat.
- Press pastry dough or wonton wrappers into greased muffin tins to form cups.
- Spoon the chicken mixture into each cup, packing slightly.
- Bake for 15-20 minutes, or until the pastry is golden and crisp.
- Allow to cool slightly before serving.
Notes
Ensure the filling isn’t too wet to prevent soggy pastry. You can substitute with turkey for a variation, or use dairy-free options.
