Ingredients

  • 2 cups boneless chicken (breast or thighs), diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, diced
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons soy sauce
  • 4 oz cream cheese
  • Ready-made pastry or wonton wrappers
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté diced chicken until golden and cooked through, around 5-7 minutes. Season with salt and pepper to taste.
  3. Remove the cooked chicken and in the same skillet, soften chopped onions and garlic until fragrant and translucent.
  4. Toss in your choice of diced veggies and cook until they soften.
  5. Return the chicken to the skillet, add soy sauce, and mix in cream cheese until combined. Adjust seasoning as necessary, then remove from heat.
  6. Press pastry dough or wonton wrappers into greased muffin tins to form cups.
  7. Spoon the chicken mixture into each cup, packing slightly.
  8. Bake for 15-20 minutes, or until the pastry is golden and crisp.
  9. Allow to cool slightly before serving.

Notes

Ensure the filling isn’t too wet to prevent soggy pastry. You can substitute with turkey for a variation, or use dairy-free options.
