- 1 lb ground chicken
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika (optional)
- 2 cloves garlic, minced
- 1 cup plain yogurt (or Greek yogurt)
- 1 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, mix the ground chicken with chopped herbs, minced garlic, and spices until well combined.
- Shape the mixture into small, oval-shaped kofta, about the size of a golf ball.
- Heat a skillet over medium heat, adding olive oil. Sear the kofta for 4-5 minutes on each side until cooked through.
- In a separate bowl, whisk yogurt, minced garlic, lemon juice, and a pinch of salt to make the garlic yogurt.
- Serve the kofta warm drizzled with garlic yogurt and fresh herbs, alongside warm pita or rice.
Notes
For a vegetarian option, use blended chickpeas instead of ground chicken. Adjust garlic in the yogurt sauce according to taste.
