Ingredients

  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika (optional)
  • 2 cloves garlic, minced
  • 1 cup plain yogurt (or Greek yogurt)
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the ground chicken with chopped herbs, minced garlic, and spices until well combined.
  2. Shape the mixture into small, oval-shaped kofta, about the size of a golf ball.
  3. Heat a skillet over medium heat, adding olive oil. Sear the kofta for 4-5 minutes on each side until cooked through.
  4. In a separate bowl, whisk yogurt, minced garlic, lemon juice, and a pinch of salt to make the garlic yogurt.
  5. Serve the kofta warm drizzled with garlic yogurt and fresh herbs, alongside warm pita or rice.

Notes

For a vegetarian option, use blended chickpeas instead of ground chicken. Adjust garlic in the yogurt sauce according to taste.
