Ingredients

  • 1 cup basmati rice or grain of choice (farro, quinoa)
  • 1 cup Greek yogurt
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • Juice of 1 lemon
  • Salt to taste
  • 1 tbsp olive oil
  • 1 cup fresh vegetables (cucumbers, tomatoes, bell peppers)
  • 2 tbsp tahini
  • Fresh herbs (parsley, mint)

Instructions

  1. In a bowl, combine yogurt, minced garlic, cumin, coriander, paprika, cinnamon, lemon juice, salt, and olive oil. Stir until well blended.
  2. Add chicken pieces to the marinade, ensuring they are well-coated. Let it marinate for at least 30 minutes.
  3. Heat a skillet over medium-high heat and add a splash of olive oil. Sauté the marinated chicken for 6-8 minutes until golden brown and cooked through.
  4. Remove the chicken from heat and let it rest.
  5. Assemble your bowl with a scoop of the grain base, sliced chicken, fresh vegetables, a drizzle of yogurt and tahini, and top with fresh herbs.
  6. Serve and enjoy!

Notes
