- 1 lb boneless chicken (breast or thighs)
- 1 cup basmati rice or grain of choice (farro, quinoa)
- 1 cup Greek yogurt
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- Juice of 1 lemon
- Salt to taste
- 1 tbsp olive oil
- 1 cup fresh vegetables (cucumbers, tomatoes, bell peppers)
- 2 tbsp tahini
- Fresh herbs (parsley, mint)
Instructions
- In a bowl, combine yogurt, minced garlic, cumin, coriander, paprika, cinnamon, lemon juice, salt, and olive oil. Stir until well blended.
- Add chicken pieces to the marinade, ensuring they are well-coated. Let it marinate for at least 30 minutes.
- Heat a skillet over medium-high heat and add a splash of olive oil. Sauté the marinated chicken for 6-8 minutes until golden brown and cooked through.
- Remove the chicken from heat and let it rest.
- Assemble your bowl with a scoop of the grain base, sliced chicken, fresh vegetables, a drizzle of yogurt and tahini, and top with fresh herbs.
- Serve and enjoy!
Notes
For best results, marinate the chicken longer for deeper flavor. Serve with additional sides like garlic mushrooms or a crisp salad.
