- 4 chicken thighs (bone-in and skin-on)
- 1 tablespoon olive oil
- 4 cloves fresh garlic, minced
- Fresh rosemary or thyme (or any herbs on hand)
- Sea salt and black pepper (to taste)
- 1 lemon (for squeezing over the top)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat dry the chicken thighs with paper towels.
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Season the chicken thighs generously with salt and pepper, then place skin-side down in the skillet. Sear for 5-7 minutes until golden brown.
- Add minced garlic and herbs around the chicken and let cook for about a minute.
- Flip the chicken thighs to cook the other side for another couple of minutes.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Squeeze fresh lemon juice over the chicken before serving.
Notes
Let the chicken rest for 5-10 minutes after removing from the oven to allow juices to redistribute.
