Description

A hearty and comforting stew featuring chickpeas and chorizo, flavored with spices and served with fresh herbs.


Ingredients

  • 200g Spanish chorizo, sliced
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 can (400g) diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 500ml chicken or vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 bay leaves
  • Salt, to taste
  • Fresh parsley or cilantro, for garnish
  • 1 tbsp olive oil

Instructions

  1. Prep the ingredients: Dice the onion, mince the garlic, and chop the bell pepper.
  2. Heat olive oil in a large skillet over medium heat. Sauté the onion until translucent, about 5 minutes.
  3. Add garlic and bell pepper, cooking for another 2-3 minutes.
  4. Add sliced chorizo and allow it to brown.
  5. Stir in chickpeas, diced tomatoes, and broth; add smoked paprika, cumin, bay leaves, and salt.
  6. Bring to a boil, then reduce heat and let it simmer uncovered for 20-30 minutes.
  7. Before serving, taste and adjust seasoning. Remove bay leaves and garnish with fresh herbs.

Notes

For a lighter option, use chicken chorizo or white beans instead of chickpeas. This stew can also be frozen for up to 3 months.
