A hearty and comforting stew featuring chickpeas and chorizo, flavored with spices and served with fresh herbs.
Ingredients

- 200g Spanish chorizo, sliced
- 1 can (400g) chickpeas, drained and rinsed
- 1 can (400g) diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 500ml chicken or vegetable broth
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 2 bay leaves
- Salt, to taste
- Fresh parsley or cilantro, for garnish
- 1 tbsp olive oil
Instructions
- Prep the ingredients: Dice the onion, mince the garlic, and chop the bell pepper.
- Heat olive oil in a large skillet over medium heat. Sauté the onion until translucent, about 5 minutes.
- Add garlic and bell pepper, cooking for another 2-3 minutes.
- Add sliced chorizo and allow it to brown.
- Stir in chickpeas, diced tomatoes, and broth; add smoked paprika, cumin, bay leaves, and salt.
- Bring to a boil, then reduce heat and let it simmer uncovered for 20-30 minutes.
- Before serving, taste and adjust seasoning. Remove bay leaves and garnish with fresh herbs.
Notes
For a lighter option, use chicken chorizo or white beans instead of chickpeas. This stew can also be frozen for up to 3 months.
