- 2 cups cooked chicken (breast or thighs)
- 1 can chickpeas, rinsed and drained
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill (or cilantro), chopped
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- Optional spices: cumin or smoked paprika
Instructions
- Heat a skillet over medium heat with a splash of olive oil. Season the chicken with salt and pepper, cooking until golden brown and fully cooked, about 6-7 minutes per side. Let it rest, then chop into bite-sized pieces.
- Rinse and drain canned chickpeas thoroughly or soak and boil dried chickpeas until tender.
- Dice the cucumber, bell pepper, and cherry tomatoes into bite-sized pieces.
- Whisk together olive oil, lemon juice, minced garlic, and any spices to make the dressing.
- In a large bowl, combine the cooked chicken, chickpeas, diced veggies, and herbs. Drizzle the dressing on top and toss to combine.
- Taste and adjust seasoning before serving. Let it chill for 15-30 minutes for flavors to meld, if desired.
- Serve fresh or over a bed of greens.
Notes
For a vegetarian version, substitute chicken with canned tuna or marinated tofu. Feel free to customize ingredients based on seasonal availability.
