- 1 lb boneless chicken (breast or thighs)
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 medium onion, chopped
- 1 cup colorful bell peppers, chopped
- 1 cup tomatoes (fresh or canned)
- Fresh cilantro or green onions, for garnish
Instructions
- Pre-heat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add diced chicken seasoned with chili powder, cumin, salt, and pepper. Sauté until cooked through, about 7-10 minutes. Remove from skillet.
- Add onions and bell peppers to the same skillet. Sauté until softened, about 5 minutes. Add crushed garlic for the last minute.
- In a large mixing bowl, combine sautéed chicken, vegetables, tomatoes, and cream cheese until creamy.
- Transfer the mixture to a baking dish and top with shredded cheddar and Monterey Jack cheeses.
- Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden.
- Let it sit for a few minutes, then garnish with cilantro or green onions before serving.
Notes
For quicker preparation, consider using shredded rotisserie chicken. Adjust cheese and spices to taste.
