Description

A comforting and flavorful blend of zesty chili layered with fluffy cornbread, perfect for family gatherings or potlucks.


Ingredients

  • 1 lb ground beef or turkey
  • 1 can kidney beans, drained
  • 1 can black beans, drained
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 cornbread mix (or homemade)
  • Optional: shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter.
  2. Sauté the diced onion and minced garlic over medium heat until soft.
  3. Add the ground beef or turkey and cook until browned. Drain excess fat.
  4. Stir in the beans, diced tomatoes, tomato sauce, and spices. Simmer for 10-15 minutes.
  5. Prepare the cornbread mix according to package directions.
  6. Spoon the chili into the baking dish and spread evenly. Pour the cornbread batter on top.
  7. Bake for 25-30 minutes until the cornbread is golden and a toothpick comes out clean.
  8. Optional: Add cheddar cheese on top for the last 5 minutes of baking.

Notes

Serve with sour cream and green onions for added flavor. This casserole freezes well for up to three months.
