Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 4 scallions, chopped
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp cooking oil (sesame, vegetable, or canola)
  • 1 tbsp rice wine or Shaoxing wine (optional)
  • Black pepper, to taste

Instructions

  1. Marinate the chicken by combining soy sauce, minced garlic, grated ginger, and rice wine. Let sit for at least 20 minutes.
  2. In a large skillet or wok, heat the cooking oil over medium-high heat until shimmering.
  3. Add the marinated chicken to the skillet in a single layer. Sear undisturbed for 3–4 minutes until browned, then stir occasionally for another 3–4 minutes until fully cooked.
  4. Toss in the chopped scallions and sauté for an additional 2 minutes until tender but bright green.
  5. Sprinkle black pepper, mix well, and adjust seasoning as needed.
  6. Serve hot over steamed rice or tossed noodles.

Notes

Consider adding fresh herbs for garnish, such as cilantro or a squeeze of lime to brighten the dish.
