Ingredients

- 1 lb boneless chicken (breast or thighs)
- 4 scallions, chopped
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 tbsp cooking oil (sesame, vegetable, or canola)
- 1 tbsp rice wine or Shaoxing wine (optional)
- Black pepper, to taste
Instructions
- Marinate the chicken by combining soy sauce, minced garlic, grated ginger, and rice wine. Let sit for at least 20 minutes.
- In a large skillet or wok, heat the cooking oil over medium-high heat until shimmering.
- Add the marinated chicken to the skillet in a single layer. Sear undisturbed for 3–4 minutes until browned, then stir occasionally for another 3–4 minutes until fully cooked.
- Toss in the chopped scallions and sauté for an additional 2 minutes until tender but bright green.
- Sprinkle black pepper, mix well, and adjust seasoning as needed.
- Serve hot over steamed rice or tossed noodles.

Consider adding fresh herbs for garnish, such as cilantro or a squeeze of lime to brighten the dish.
