- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 8 oz dark chocolate, melted
- 1 cup sour cream
- 1 tsp vanilla extract
- 1 ½ cups graham cracker crumbs
- ½ cup butter, melted
Instructions
- Preheat the oven to 325°F (160°C).
- Mix graham cracker crumbs with melted butter and sugar; press into a greased springform pan. Bake for 10 minutes and let cool.
- Melt dark chocolate using a double boiler or microwave and let cool slightly.
- Beat cream cheese and sugar until smooth; add eggs one at a time.
- Fold in melted chocolate, sour cream, and vanilla until combined.
- Pour filling onto cooled crust and bake for 50-60 minutes, until edges are set but center jiggles slightly.
- Turn off the oven, crack the door, and let cool for 1 hour before refrigerating for at least 4 hours.
- Serve topped with whipped cream, chocolate shavings, or fresh berries.
Notes
Use room temperature ingredients for best results. A water bath can help prevent cracks during baking.
