Description

A nostalgic chocolate cheesecake with a creamy blend of chocolate and cream cheese, topped with a rich ganache.


Ingredients

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 8 oz dark chocolate, melted
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 1 ½ cups graham cracker crumbs
  • ½ cup butter, melted

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix graham cracker crumbs with melted butter and sugar; press into a greased springform pan. Bake for 10 minutes and let cool.
  3. Melt dark chocolate using a double boiler or microwave and let cool slightly.
  4. Beat cream cheese and sugar until smooth; add eggs one at a time.
  5. Fold in melted chocolate, sour cream, and vanilla until combined.
  6. Pour filling onto cooled crust and bake for 50-60 minutes, until edges are set but center jiggles slightly.
  7. Turn off the oven, crack the door, and let cool for 1 hour before refrigerating for at least 4 hours.
  8. Serve topped with whipped cream, chocolate shavings, or fresh berries.

Notes

Use room temperature ingredients for best results. A water bath can help prevent cracks during baking.
