- 1 cup Unsalted Butter
- 1/2 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 2 Eggs
- 2 1/4 cups All-purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Vanilla Extract
- 1 cup Chocolate Chips
- 3/4 cup Pistachios, shelled and chopped
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, followed by the vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and a pinch of salt.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips and chopped pistachios.
- Using a tablespoon or cookie scoop, drop the dough onto the prepared baking sheet, spacing them a couple of inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden and the centers are soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For best results, let the dough rest in the fridge for about 30 minutes before baking. Slightly underbake for a gooey center.
