- 8 oz chocolate (dark, milk, or white)
- 1 tsp coconut oil or shortening

Instructions
- Combine softened cream cheese, powdered sugar, and vanilla extract in a bowl, blending until smooth and creamy.
- Shape the mixture into bite-sized balls, about one inch in diameter, and place them on a baking sheet lined with parchment paper.
- Chill the cheesecake balls in the freezer for about 30 minutes.
- While the cheesecake balls chill, melt your chocolate in a microwave-safe bowl or over a double boiler, adding coconut oil or shortening for a smoother melting process.
- Dip each cheesecake ball into the melted chocolate, fully coating it, then lift it out with a fork allowing excess chocolate to drip off.
- Place the coated bites back onto the lined baking sheet and sprinkle any desired toppings over the chocolate while it’s still wet.
- Chill the bites again in the refrigerator until the chocolate sets, about 15-20 minutes.
- Serve the Chocolate Covered Cheesecake Bites chilled.
