Ingredients
Scale
- 1 cup unsweetened cocoa powder
- 1 cup all-purpose flour (or almond flour for gluten-free)
- 1 cup cherries (fresh or frozen)
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter
- 1 cup semisweet chocolate (for coating)
- 2 large eggs
Instructions
- Prepare Your Baking Tray: Grease an 8×8 inch baking pan and line it with parchment paper.
- Make the Brownie Base: In a mixing bowl, combine melted butter and sugars, stir in cocoa powder, eggs, and vanilla extract. Fold in flour until just combined.
- Add the Cherries: Gently fold in pitted and chopped cherries, then pour the batter into the prepared pan.
- Bake: Bake in a preheated oven at 350°F for 20-25 minutes. Remove and cool completely.
- Shape the Brownie Bombs: Cut cooled brownies into squares, then roll each square into a ball.
- Melt the Chocolate: Melt semisweet chocolate in a microwave-safe bowl, heating in short bursts.
- Coat the Bombs: Dip each brownie ball into melted chocolate until fully covered.
- Chill: Refrigerate the coated bombs for at least 30 minutes to set the chocolate.
- Serve: Once set, serve and enjoy!
Notes
Avoid overmixing the brownie batter for optimal fudginess. Enjoy with vanilla ice cream or a drizzle of raspberry coulis.
