Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup milk (whole or 2%)
  • 2 tbsp vegetable oil or melted butter
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  3. In a separate bowl, beat the egg, then add milk, oil or melted butter, and vanilla extract. Mix well.
  4. Gradually add wet ingredients to dry mixture, stirring until combined; some lumps are okay.
  5. Line a muffin tray with two cupcake liners and fill them about two-thirds full with the batter.
  6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the tin for 5 minutes, then transfer to a wire rack. Frost as desired.

Notes

For a richer flavor, try adding a dash of espresso or using brown sugar instead of granulated sugar. You can also substitute non-dairy milk if needed.
