Ingredients

- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- a pinch of salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a mixing bowl, combine one cup of flour, cocoa powder, baking soda, and salt. Set aside.
- In a separate bowl, cream together softened butter and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract, beating until fully combined.
- Slowly mix the dry ingredients into the wet mix, stirring gently. If adding chocolate chips, mix them in now.
- Drop rounded tablespoons of dough onto prepared baking sheets, leaving space between each scoop.
- Bake for 10 to 12 minutes, until edges are set but centers are slightly soft.
- Let cool briefly before transferring to a wire rack.

Notes
For gluten-free cookies, substitute almond flour for all-purpose flour. Use a flaxseed egg for a vegan version.
