Description

Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 2 cups all-purpose flour
  • 2 large eggs
  • Pinch of salt
  • Filling: chocolate ganache or fruit preserves (your choice)

Instructions

  1. Cream the unsalted butter and granulated sugar in a large mixing bowl until light and fluffy, about 3 minutes.
  2. Incorporate the cocoa powder and mix until just combined.
  3. Add the eggs one at a time, ensuring each is fully incorporated.
  4. Slowly mix in the all-purpose flour and a pinch of salt, being careful not to overmix.
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least 1 hour.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop out tablespoons of dough, roll into balls, and make an indentation in each with your thumb.
  8. Fill each indentation with chocolate ganache or jam.
  9. Bake for 10-12 minutes until the edges are set and centers are slightly soft.
  10. Allow to cool on the pan for a few minutes before transferring to a wire rack.

Notes

For a vegan option, substitute unsalted butter with coconut oil or vegan butter, and replace eggs with flaxseed eggs.
