Ingredients

- 1 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup cocoa powder
- 2 cups all-purpose flour
- 2 large eggs
- Pinch of salt
- Filling: chocolate ganache or fruit preserves (your choice)
Instructions
- Cream the unsalted butter and granulated sugar in a large mixing bowl until light and fluffy, about 3 minutes.
- Incorporate the cocoa powder and mix until just combined.
- Add the eggs one at a time, ensuring each is fully incorporated.
- Slowly mix in the all-purpose flour and a pinch of salt, being careful not to overmix.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop out tablespoons of dough, roll into balls, and make an indentation in each with your thumb.
- Fill each indentation with chocolate ganache or jam.
- Bake for 10-12 minutes until the edges are set and centers are slightly soft.
- Allow to cool on the pan for a few minutes before transferring to a wire rack.
Notes
For a vegan option, substitute unsalted butter with coconut oil or vegan butter, and replace eggs with flaxseed eggs.
