A rich and indulgent chocolate cake layered with creamy ganache, caramel, and crunchy pecans.

- 2 cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 3 large eggs
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
- 1 cup chopped pecans
- Caramel sauce for drizzling
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, cream together softened butter, granulated sugar, and brown sugar for about 2-3 minutes. Add in eggs one at a time, mixing well after each addition. Stir in milk and vanilla.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- While the cakes cool, heat heavy cream in a saucepan. When it starts to simmer, remove from heat and add the chopped chocolate, stirring until smooth.
- Assemble the cake by placing one layer on a serving platter, spreading ganache on top, and adding pecans and caramel drizzle. Place the second layer on top.
- Pour remaining ganache over the assembled cake, and let it set for at least 30 minutes before slicing.
Notes
Use high-quality ingredients for the best flavor. To enhance the pecan flavor, toast them lightly before adding.
