Ingredients

  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped
  • 1 cup chopped pecans
  • Caramel sauce for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together softened butter, granulated sugar, and brown sugar for about 2-3 minutes. Add in eggs one at a time, mixing well after each addition. Stir in milk and vanilla.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  7. While the cakes cool, heat heavy cream in a saucepan. When it starts to simmer, remove from heat and add the chopped chocolate, stirring until smooth.
  8. Assemble the cake by placing one layer on a serving platter, spreading ganache on top, and adding pecans and caramel drizzle. Place the second layer on top.
  9. Pour remaining ganache over the assembled cake, and let it set for at least 30 minutes before slicing.

Notes

Use high-quality ingredients for the best flavor. To enhance the pecan flavor, toast them lightly before adding.
