Description

Delightful mini cheesecake bites perfect for sharing with family during the holidays.


Ingredients

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 1/2 cups crushed gingersnap or graham cracker crust
  • 1/3 cup unsalted butter, melted
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup crushed peppermint (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix crushed gingersnap or graham crackers with melted butter until wet sand texture.
  3. Press into the bottom of a mini muffin tray lined with paper liners and bake for 5-7 minutes.
  4. Blend cream cheese and sugar until smooth; add eggs one at a time and mix well.
  5. Stir in vanilla, cinnamon, and nutmeg.
  6. Spoon cheesecake mixture over cooled crusts, filling each liner 3/4 full.
  7. Bake for 15-20 minutes until centers are set but slightly jiggly.
  8. Cool to room temperature, then refrigerate for at least 2 hours.
  9. Optional: Top with whipped cream, crushed peppermint, or chocolate before serving.

Notes

For a lighter version, you can use low-fat or vegan cream cheese. Don’t skip the chilling step for the best flavor and texture.
