Ingredients

- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 1/2 cups crushed gingersnap or graham cracker crust
- 1/3 cup unsalted butter, melted
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup crushed peppermint (optional)
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, mix crushed gingersnap or graham crackers with melted butter until wet sand texture.
- Press into the bottom of a mini muffin tray lined with paper liners and bake for 5-7 minutes.
- Blend cream cheese and sugar until smooth; add eggs one at a time and mix well.
- Stir in vanilla, cinnamon, and nutmeg.
- Spoon cheesecake mixture over cooled crusts, filling each liner 3/4 full.
- Bake for 15-20 minutes until centers are set but slightly jiggly.
- Cool to room temperature, then refrigerate for at least 2 hours.
- Optional: Top with whipped cream, crushed peppermint, or chocolate before serving.
Notes
For a lighter version, you can use low-fat or vegan cream cheese. Don’t skip the chilling step for the best flavor and texture.
