Ingredients

  • 1 cup Chocolate Chips (Bittersweet or Semi-Sweet)
  • 1/2 cup Heavy Cream
  • 1 cup Brown Sugar
  • 1/4 cup Butter (unsalted)
  • 1 tsp Vanilla Extract
  • 1/2 tsp Sea Salt (optional)

Instructions

  1. Melt the chocolate chips in a bowl over simmering water, stirring until fully melted. Coat the bottom and sides of muffin liners or silicone cups with a thin layer. Chill in the refrigerator until set, about 15 minutes.
  2. In a saucepan, combine brown sugar, butter, and heavy cream. Cook on medium heat, stirring constantly until it reaches a gentle boil. Simmer for about 5 minutes until thickened. Remove from heat and stir in vanilla extract and a pinch of sea salt.
  3. Remove the chocolate cups from the fridge. Pour a spoonful of caramel into each chocolate cup, careful not to overfill. Refrigerate for another 15 minutes.
  4. Melt additional chocolate and drizzle over the tops of each cup to seal the caramel. Place in the fridge until completely set.
  5. Optional: Sprinkle with crushed candy canes or additional sea salt for decoration.
  6. Once set, gently peel from liners and serve. These bites are best enjoyed fresh but can be stored in an airtight container for up to two weeks.

Notes

For a festive twist, consider adding crushed peppermint or spices into the caramel. Use a candy thermometer to ensure the caramel reaches the right consistency.
