- 1 cup Chocolate Chips (Bittersweet or Semi-Sweet)
- 1/2 cup Heavy Cream
- 1 cup Brown Sugar
- 1/4 cup Butter (unsalted)
- 1 tsp Vanilla Extract
- 1/2 tsp Sea Salt (optional)
Instructions
- Melt the chocolate chips in a bowl over simmering water, stirring until fully melted. Coat the bottom and sides of muffin liners or silicone cups with a thin layer. Chill in the refrigerator until set, about 15 minutes.
- In a saucepan, combine brown sugar, butter, and heavy cream. Cook on medium heat, stirring constantly until it reaches a gentle boil. Simmer for about 5 minutes until thickened. Remove from heat and stir in vanilla extract and a pinch of sea salt.
- Remove the chocolate cups from the fridge. Pour a spoonful of caramel into each chocolate cup, careful not to overfill. Refrigerate for another 15 minutes.
- Melt additional chocolate and drizzle over the tops of each cup to seal the caramel. Place in the fridge until completely set.
- Optional: Sprinkle with crushed candy canes or additional sea salt for decoration.
- Once set, gently peel from liners and serve. These bites are best enjoyed fresh but can be stored in an airtight container for up to two weeks.
Notes
For a festive twist, consider adding crushed peppermint or spices into the caramel. Use a candy thermometer to ensure the caramel reaches the right consistency.
