Instructions
- Prepare the cranberries: Rinse cranberries and simmer in a saucepan with a little water and half a cup of sugar until they pop and soften.
- Whip the cream cheese: In a mixing bowl, combine softened cream cheese, half a cup of sugar, and vanilla extract. Beat until smooth and creamy.
- Whip the heavy cream: In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Prepare the layers: In a trifle dish or individual cups, start with a layer of cookie crumbs, followed by a layer of the creamy mixture, then cranberry compote. Repeat until topped.
- Garnish: Top each cup with whipped cream, cranberries, and a sprig of mint.
- Chill: Refrigerate for at least two hours before serving.
