- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar (for coating)
Instructions
- In a large mixing bowl, combine the flour, cocoa powder, baking powder, and baking soda.
- In another bowl, whisk the eggs; then add granulated sugar and vanilla extract until light and fluffy.
- Gradually incorporate the dry ingredients into your wet mixture. Mix until just combined.
- Cover the bowl with plastic wrap and let the dough chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Scoop out the chilled dough and roll it into balls, then coat each ball in powdered sugar.
- Place the cookie balls on prepared baking sheets with space in between each.
- Bake for 10-12 minutes, or until the edges are slightly crisp and tops have cracked.
- Let the cookies cool on the baking sheet for a couple of minutes before transferring to wire racks.
