- Sourdough bread dough
- 1 cup mozzarella cheese (or provolone/sharp cheddar)
- 1 cup fresh cremini or button mushrooms, sautéed
- Fresh basil or thyme
- 2 cloves minced garlic
- 2 tablespoons olive oil
- Optional fillings: pepperoni, bell peppers, or spinach
Instructions
- Prepare the Dough: If using freshly made sourdough, allow it to rise overnight. Roll out the dough on a floured surface into a rectangular shape, about 1/4 inch thick.
- Sauté the Filling: In a skillet over medium heat, add olive oil and minced garlic. Once fragrant, toss in sliced mushrooms and cook for about 5-7 minutes. Add salt and pepper to taste, along with your chosen herbs.
- Assemble the Roll-Ups: Spread a thin layer of cheese across the dough, followed by a generous portion of the sautéed mushrooms. Leave about an inch on the edges so you can seal them later.
- Roll it Up: Starting from one end, carefully roll the dough into a log shape, pinching to seal as you go.
- Slice: Cut the log into 1.5-2 inch thick slices — these will be your roll-ups!
- Cook: In a skillet, add a tablespoon of olive oil over medium heat. Place the roll-ups cut side down and cook until golden brown on one side, about 4-5 minutes. Flip and repeat for the other side.
- Serve: Transfer your roll-ups to a plate and drizzle with olive oil and sprinkle fresh herbs for garnish. Serve warm with marinara sauce for dipping.
