Ingredients

  • 1 cup cranberries (fresh or frozen)
  • Butter (for frying)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, cinnamon, and nutmeg.
  2. In another bowl, beat the eggs and stir in the milk, melted butter, and vanilla extract.
  3. Slowly pour the wet ingredients into the dry mixture and gently fold to combine, leaving some lumps.
  4. Gently fold in the cranberries.
  5. Preheat a skillet or griddle over medium heat and add butter.
  6. Pour about 1/4 cup of batter for each pancake. Cook until bubbles form, then flip and cook until golden brown.
  7. Serve warm with toppings of your choice like whipped cream, powdered sugar, or fresh fruits.

Notes

Feel free to customize with additional ingredients like chocolate chips or nuts. For gluten-free, substitute almond flour for all-purpose flour.
