  • 1 tablespoon fresh lemon or orange zest
  • 1/2 cup good quality brandy (or apple juice for non-alcoholic)
  • 2 cups fresh breadcrumbs
  • 2 large eggs
  • 1/2 cup brown sugar
  • Butter for greasing

Instructions

  1. Prepare the steaming equipment with water simmering in a pot, and grease a pudding basin with butter and parchment paper.
  2. In a large bowl, mix the dried fruits, breadcrumbs, spices, and nuts until well combined.
  3. In another bowl, whisk together the eggs, brown sugar, and citrus zest. Add the brandy and mix well.
  4. Gradually fold the wet mixture into the dry ingredients until fully incorporated.
  5. Spoon the mixture into the prepared basin and place a disc of parchment on top.
  6. Cover with a kitchen towel and steam for 6-8 hours, ensuring water levels remain adequate.
  7. Let the pudding cool completely before unwrapping, and store wrapped in plastic in the fridge if not serving immediately.
  8. For the Brandy Butter, whip softened butter with powdered sugar and a splash of brandy until smooth.
