Ingredients

  • 1 cup raisins
  • 1 cup currants
  • 1 cup chopped dried apricots
  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 4 eggs
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 1 tbsp lemon zest
  • 1/2 cup brandy
  • 1 cup powdered sugar (for Brandy Butter)

Instructions

  1. Soak the dried fruits in warm water or brandy for about an hour.
  2. In a large bowl, cream the softened butter and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, sift together flour, baking powder, and spices. Gradually fold into the butter mixture.
  5. Fold in citrus zest and soaked dried fruits.
  6. Grease a pudding basin, pour in the mixture, and cover with parchment and aluminum foil.
  7. Steam for 6-8 hours, checking water levels periodically.
  8. For Brandy Butter, beat butter and powdered sugar, then stir in brandy.
  9. Once the pudding cools, reheat by steaming for 30 minutes. Serve warm with brandy butter.

Notes

Soak the dried fruits long enough for best flavor. Ensure the pudding basin is tightly covered while steaming.
