A festive and moist Red Velvet Poke Cake filled with delicious cream cheese frosting, perfect for holiday celebrations.

- 1 box Red Velvet Cake Mix
- 3 Eggs
- 1/2 cup Vegetable Oil
- 1 cup Buttermilk
- 8 oz Cream Cheese, softened
- 1/2 cup Butter, softened
- 4 cups Powdered Sugar
- 2 tsp Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, blend the red velvet cake mix, eggs, vegetable oil, and buttermilk until smooth.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool for 10-15 minutes before poking holes in it.
- Whip the cream cheese and butter together until fluffy, then mix in the powdered sugar and vanilla extract.
- Poke holes all over the cake with a skewer and spread the frosting over it, letting it seep into the holes.
- Cover and chill in the fridge for at least 2 hours before serving.
Notes
Measure ingredients accurately and allow the cake to cool before poking to prevent a melted mess.
