Ingredients
- Beef roast (chuck or ribeye)
- Red wine (Cabernet Sauvignon or Merlot)
- Fresh garlic cloves
- Sweet onions
- Fresh rosemary and thyme
- Beef broth
- Butter
- Cornstarch or flour
- Salt
- Pepper
Instructions
- Preheat your oven to 350°F (175°C).
- Pat beef roast dry and season with salt, pepper, and minced garlic. Let sit for 30 minutes.
- Sear the roast in a preheated oven-safe skillet with butter until golden brown (about 4-5 minutes per side).
- Add sliced onions and fresh herbs to the skillet and sauté until fragrant (2-3 minutes).
- Deglaze with red wine and reduce for 3-5 minutes.
- Return the roast to the skillet, add beef broth, cover, and roast in the oven for 1.5 to 2 hours.
- Let the roast rest for 20 minutes.
- Make the gravy by thickening drippings with cornstarch or flour slurry and whisking in butter.
- Slice the roast against the grain, serve with gravy and garnish with herbs.
