Ingredients

  • Beef roast (chuck or ribeye)
  • Red wine (Cabernet Sauvignon or Merlot)
  • Fresh garlic cloves
  • Sweet onions
  • Fresh rosemary and thyme
  • Beef broth
  • Butter
  • Cornstarch or flour
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Pat beef roast dry and season with salt, pepper, and minced garlic. Let sit for 30 minutes.
  3. Sear the roast in a preheated oven-safe skillet with butter until golden brown (about 4-5 minutes per side).
  4. Add sliced onions and fresh herbs to the skillet and sauté until fragrant (2-3 minutes).
  5. Deglaze with red wine and reduce for 3-5 minutes.
  6. Return the roast to the skillet, add beef broth, cover, and roast in the oven for 1.5 to 2 hours.
  7. Let the roast rest for 20 minutes.
  8. Make the gravy by thickening drippings with cornstarch or flour slurry and whisking in butter.
  9. Slice the roast against the grain, serve with gravy and garnish with herbs.
