- 1 1/2 cups granulated sugar
- 1 tablespoon baking powder
- 3 large eggs
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 cup unsalted butter, softened (for frosting)
- 4 cups confectioners’ sugar
- Green food coloring
- Milk or cream (for frosting consistency)
- 1 teaspoon peppermint extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Cream together the butter and sugar until light and fluffy. Add eggs and vanilla, mixing well.
- Gradually beat in flour and baking powder, then add milk and stir until just combined.
- Fill cupcake liners 2/3 full and bake for 15-18 minutes until a toothpick inserted comes out clean. Cool completely.
- For frosting, whip softened butter until creamy, add confectioners’ sugar and milk to desired consistency, then mix in food coloring and peppermint extract.
- Frost cooled cupcakes in a swirl pattern and decorate with candies and shredded coconut.
