- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- Pinch of salt
- 2 teaspoons cinnamon
- Cinnamon and brown sugar mixture for swirling
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, beat together cream cheese, granulated sugar, and a dash of vanilla extract until smooth and creamy. Set aside.
- In a large bowl, cream together unsalted butter and brown sugar until fluffy. Mix in eggs one at a time, followed by vanilla extract.
- In another bowl, whisk together flour, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Take about 1 cup of your prepared dough and swirl in some cinnamon and brown sugar mixture.
- Scoop a tablespoon of dough into your hands, flatten it out, and place a spoonful of the cream cheese filling in the center. Fold and roll into a ball.
- Place the cookie dough balls on lined baking sheets, spaced apart. Bake for 12-15 minutes until golden.
- Cool on the baking sheet for a minute before transferring to cooling racks.
Notes
For best results, ensure cream cheese and butter are at room temperature. Chill dough for thicker cookies.
