Instructions

  1. Prepare the buttermilk: Mix 1 cup of milk with 1 tablespoon of vinegar or lemon juice and let it sit for 5 minutes.
  2. Combine dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. Mix wet ingredients: In another bowl, beat the egg and add the buttermilk, vanilla extract, and melted butter. Mix well.
  4. Combine mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined; small lumps are okay.
  5. Prep the pan: Preheat a skillet over medium heat and coat with butter or oil.
  6. Pour and cook: For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form, about 3-4 minutes, then flip and cook another 2-3 minutes until golden brown.
  7. Keep warm and serve: Keep pancakes warm in a low oven while cooking the rest. Serve with syrup, fresh fruit, or whipped cream.

Notes

For a vegan version, use plant-based milk with vinegar, a flax egg, and coconut oil instead of butter.
