Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons olive oil
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping beef, vegetables, and aromatics.
  2. Heat oil in a large pot over medium-high heat and brown the beef in batches.
  3. Remove the beef and sauté onions and garlic in the same pot.
  4. Return the beef to the pot, add vegetables, broth, wine, and herbs.
