- 1 lb ground beef (or a mix of ground beef and pork)
- 2 large russet or Yukon gold potatoes
- 1 cup fresh mushrooms (cremini or button)
- 1 medium onion
- 2 cloves garlic
- 1 egg
- 1 cup breadcrumbs
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- 1/2 cup shredded cheddar or mozzarella cheese (optional)
- 2 tbsp butter (for mashed potatoes)
- 1/4 cup cream (for mashed potatoes)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare mashed potatoes: Peel and chop potatoes, boil in salted water until soft (15-20 minutes). Drain, mash with butter, cream, salt, and pepper; set aside.
- In a skillet, heat oil and sauté chopped onion and minced garlic until translucent. Add diced mushrooms, cook until moisture is released; set aside to cool.
- In a large bowl, combine ground meat, sautéed vegetables, breadcrumbs, egg, Worcestershire sauce, and seasonings. Mix until just combined.
- Form the mixture into a loaf shape on a lined baking sheet. Top with prepared mashed potatoes, smoothing evenly.
- Bake for about 1 hour or until the internal temperature reaches 160°F (70°C). Let it rest for 10-15 minutes before slicing.
Notes
Avoid overmixing to keep the meatloaf tender. Let it rest to prevent it from falling apart when slicing.
