  • 2 large russet or Yukon gold potatoes
  • 1 cup fresh mushrooms (cremini or button)
  • 1 medium onion
  • 2 cloves garlic
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar or mozzarella cheese (optional)
  • 2 tbsp butter (for mashed potatoes)
  • 1/4 cup cream (for mashed potatoes)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare mashed potatoes: Peel and chop potatoes, boil in salted water until soft (15-20 minutes). Drain, mash with butter, cream, salt, and pepper; set aside.
  3. In a skillet, heat oil and sauté chopped onion and minced garlic until translucent. Add diced mushrooms, cook until moisture is released; set aside to cool.
  4. In a large bowl, combine ground meat, sautéed vegetables, breadcrumbs, egg, Worcestershire sauce, and seasonings. Mix until just combined.
  5. Form the mixture into a loaf shape on a lined baking sheet. Top with prepared mashed potatoes, smoothing evenly.
  6. Bake for about 1 hour or until the internal temperature reaches 160°F (70°C). Let it rest for 10-15 minutes before slicing.

Notes

Avoid overmixing to keep the meatloaf tender. Let it rest to prevent it from falling apart when slicing.
