- 8 oz cream cheese, softened
- 2 cups fresh cranberries
- 1/2 cup brown sugar
- 1/4 cup mayonnaise
- 1/4 cup fresh herbs (rosemary, chives, or parsley), finely chopped
- 1 shallot, finely chopped
- Salt to taste
- Nuts (optional, for added crunch)
Instructions
- Prepare the Cranberries: In a small saucepan, combine cranberries with sugar and water over medium heat. Cook until cranberries start to burst, about 5–7 minutes.
- Mix the Base: In a mixing bowl, beat the cream cheese until smooth. Allow it to sit at room temperature for 30 minutes.
- Add the Magic: To the cream cheese, add the cooked cranberries (with juices), mayonnaise, herbs, and shallots. Mix until combined and smooth.
- Chill: Cover the dip and let it chill for at least an hour.
- Serve: Stir before serving, and garnish with additional herbs or whole cranberries.
Notes
For an added crunch, fold in nuts before chilling. Serve in a hollowed-out bell pepper or pumpkin for presentation.
