- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 4 large egg whites, aged
- 1/2 cup granulated sugar
- Food coloring (optional)
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
Instructions
- Prepare the egg whites by separating them a day in advance and letting them come to room temperature.
- Sift almond flour and powdered sugar together in a bowl.
- Whip egg whites until foamy, then gradually add granulated sugar, whipping until stiff peaks form. Add food coloring if desired.
- Gently fold in the almond flour mixture until combined.
- Pipe small rounds onto a parchment-lined baking sheet and let them rest for 30-60 minutes until a skin forms.
- Bake at 300°F (150°C) for 15-18 minutes until firm. Allow to cool completely.
- For the filling, whip softened butter until creamy, gradually adding powdered sugar and vanilla extract until smooth.
- Fill the cooled macaron shells and sandwich them together. Let rest in the fridge for at least 24 hours before serving.
