Ingredients

  • 1 3/4 cups powdered sugar
  • 4 large egg whites, aged
  • 1/2 cup granulated sugar
  • Food coloring (optional)
  • 1/2 cup unsalted butter, softened

Instructions

  1. Prepare the egg whites by separating them a day in advance and letting them come to room temperature.
  2. Sift almond flour and powdered sugar together in a bowl.
  3. Whip egg whites until foamy, then gradually add granulated sugar, whipping until stiff peaks form. Add food coloring if desired.
  4. Gently fold in the almond flour mixture until combined.
  5. Pipe small rounds onto a parchment-lined baking sheet and let them rest for 30-60 minutes until a skin forms.
  6. Bake at 300°F (150°C) for 15-18 minutes until firm. Allow to cool completely.
  7. For the filling, whip softened butter until creamy, gradually adding powdered sugar and vanilla extract until smooth.
  8. Fill the cooled macaron shells and sandwich them together. Let rest in the fridge for at least 24 hours before serving.
