- 1 lb boneless chicken breasts or thighs
- 8 oz cremini mushrooms, sliced
- 4 oz shiitake mushrooms, sliced
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth (or vegetable broth for a lighter version)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh thyme or parsley, for garnish
- Juice of 1 lemon
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onions, carrots, and celery. Sauté for about 5 minutes until the veggies soften up.
- Toss in minced garlic and chopped mushrooms, stirring until the mushrooms release their juices—about 5 minutes.
- Add in the diced chicken, seasoned with salt and pepper, and cook until it’s browned on all sides.
- Pour in your choice of broth and bring everything to a gentle boil. Once bubbling, reduce the heat and let it simmer for about 20-25 minutes.
- Just before serving, add fresh thyme or parsley along with a squeeze of lemon juice.
Notes
This soup is adaptable; you can substitute chicken with beans or lentils for a vegetarian option. Store leftovers in the fridge for up to three days or freeze for up to three months.
