  • 4 oz shiitake mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth (or vegetable broth for a lighter version)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh thyme or parsley, for garnish
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onions, carrots, and celery. Sauté for about 5 minutes until the veggies soften up.
  2. Toss in minced garlic and chopped mushrooms, stirring until the mushrooms release their juices—about 5 minutes.
  3. Add in the diced chicken, seasoned with salt and pepper, and cook until it’s browned on all sides.
  4. Pour in your choice of broth and bring everything to a gentle boil. Once bubbling, reduce the heat and let it simmer for about 20-25 minutes.
  5. Just before serving, add fresh thyme or parsley along with a squeeze of lemon juice.
