Instructions
- Prepare the crepe batter: In a mixing bowl, combine flour, eggs, milk, and salt. Whisk until smooth. Let it rest for at least 30 minutes.
- Cook the crepes: Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour a ladle of batter into the skillet and cook until the edges lift, then flip and cook for an additional minute.
- Make the filling: In a separate bowl, whisk together coconut cream, espresso, sugar, and vanilla extract until creamy.
- Layer the cake: Spread a thin layer of the filling between each crepe. Repeat until you have a stack.
- Chill and serve: Allow the cake to chill in the refrigerator for at least two hours before slicing and serving with fresh fruit or chocolate drizzle.
Notes
Use gluten-free flour for a gluten-free version. Can substitute coconut cream with unsweetened coconut milk.
