  • 1 zucchini, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Chili (fresh or paste) to taste

Instructions

  1. Prepare your ingredients: Clean and cut the fish into bite-sized pieces. Chop garlic, ginger, and shallots finely.
  2. Sauté the aromatics: In a large pot, cook the garlic, ginger, and shallots in a drizzle of oil over medium heat until soft and fragrant, about 3-4 minutes.
  3. Add the broth: Pour in the broth and bring to a soft simmer for a few minutes.
  4. Incorporate the coconut milk: Stir in the coconut milk until blended.
  5. Add the fish and vegetables: Lower the fish and vegetable pieces into the pot. Cook for about 6-8 minutes until fish is flaky and cooked through.
