- 1 can (13.5 oz) coconut milk
- 2 cloves garlic, minced
- 1 inch fresh ginger, minced
- 1 shallot, finely chopped
- 4 cups fish or vegetable broth
- 1 bell pepper, diced
- 1 zucchini, diced
- 1/2 cup fresh cilantro, chopped
- 1 lime, juiced
- Chili (fresh or paste) to taste
Instructions
- Prepare your ingredients: Clean and cut the fish into bite-sized pieces. Chop garlic, ginger, and shallots finely.
- Sauté the aromatics: In a large pot, cook the garlic, ginger, and shallots in a drizzle of oil over medium heat until soft and fragrant, about 3-4 minutes.
- Add the broth: Pour in the broth and bring to a soft simmer for a few minutes.
- Incorporate the coconut milk: Stir in the coconut milk until blended.
- Add the fish and vegetables: Lower the fish and vegetable pieces into the pot. Cook for about 6-8 minutes until fish is flaky and cooked through.
- Finish with lime and herbs: Stir in fresh herbs and lime juice just before serving.
- Serve warm: Ladle the soup into bowls, garnishing with additional herbs and lime wedges.
Notes
For a vegetarian version, replace fish with tofu and use vegetable broth. Adjust the chili to your heat preference.
